Traditional Northeastern Sarapatel recipe

Sarapatel is one of those traditional Brazilian recipes that pass from generation to generation. Brought from Portugal (where it has the name "sarrabulho") to Brazil, it is a heavy dish, based on viscera and pig blood, and therefore contains a high content of fat. It is especially prepared in winter for those who need a lot of energy and strength to work. Ingredients for making traditional Northeastern Sarapatel:

 1 kilogram of sarapatel preparation

 4 cloves of garlic

 1 unit of onion

 3 units of tomato

 1 unit of red pepper

 2 bay leaves

 3 tablespoons of vinegar

 ½ cup lard or oil

 2 lemon units

 chopped green smell

 Black pepper

 salt

How to make traditional Northeastern Sarapatel:

To make this sarapatel recipe, start by reserving the blood and washing the pork pieces with lemon. Heat a pan of water and, once it has boiled, blanch the pork for 2-3 minutes.

Tip: In the northeast you can easily find in the market and fair a preparation of sarapatel that usually includes bacon, heart, liver, tongue and pig's blood.

Finely chop the garlic, onion, tomatoes and peppers and cut the blanched pork into cubes. Mix everything together, add the vinegar, coriander and some of the blood and season with salt and pepper to taste.

Heat a pan with lard or oil and bay leaf and saute the sarapatel for 15-20 minutes, stirring occasionally so as not to burn. Add water and cook for 30 minutes. Then add the remaining blood, add salt and pepper and cook.

After the previous step, you can serve your traditional Northeastern sarapatel! Serve with cabbage crumbs or white rice and good appetite!
